I don’t know about you, but many times a salad is the perfect lunch. And if you have greens in your fridge, some sort of protein such as boiled egg or grilled chicken along with this homemade dressing, you’ve got a great healthy lunch.
My mom gave me a great recipe for a simple salad dressing involving apple cider vinegar and I tweaked it a bit. Served it up at book club and my friends loved it!
All you need are 3 ingredients…2/3 cup lemon infused olive oil (you can find this at the bottom of the post), 1/4 cup maple syrup and 6 tablespoons of apple cider vinegar.
Pour all ingredients in a jar….
Shake it up….
Done!
Keep in the fridge until you’re ready to use. If you find your dressing has solidified a bit in the fridge, stick it in the microwave for 1 minute. This is totally normal with homemade dressings. Since, they’re not full of preservatives.
Now, just shake and pour.
