That green leafy stuff that we snip off of beets and throw out? Don’t throw out. Beet greens are rich in protein, phosphorus, zinc and fiber. Not to mention antioxidants, B6, magnesium, and potassium. You get 220% of your daily vitamin A eating a serving of beet greens and this recipe has more than that. So, have this treat as a yummy mid-afternoon snack!
It’s super easy. Just snip the leaves off your beets and throw into a blender! If you have a high powered one, such as a Vitamix, you can use the stalks too. Add your frozen banana, almond butter, almond milk and a little vanilla.
Put into a cute glass, add your smoothie straw and you’re good to go!

Beet Greens Smoothie
- 3 cups beet greens
- 1 frozen banana (add ice if not frozen)
- 1 cup almond milk
- 1 tsp vanilla
- 1 Tbsp almond butter
Blend in a high powered blender and enjoy!
