I’ve had one version or another of cashew butter a couple of times this year in high-end restaurants.  One as a dessert, the other with the main course.  Cashews contain heart healthy benefits similar to olive oil.  So, if you are looking for foods with cardio-protective benefits, this would be great for you.  And yummy, too!

I make my version sweet adding coconut sugar and cinnamon.  I eat a dollop (about 2 tablespoons) each night as my evening snack with some sliced apples or pears.  It really fills the belly before bed.  (I like to eat a snack before bed, a big no-no for many people, but I’ve done it for years….shhhh).

First, soak 1 cup of cashews in water, enough to cover, for at least 2 hours.  You’ll notice that they really soften up!

After the cashews have softened up really well, drain them and then throw in a high-powered blender, such as a Vitamix, with 1/2 cup of water, coconut sugar, vanilla, a pinch of salt and cinnamon.  Blend until nice and creamy, at least a minute.  Until it looks like this….

Now you’re done!  Easy peasy!!  This cashew butter usually last me about a week.

I recommend a Vitamix similar to this one.  Ours is used every day.

Cashew Butter

  • 1 Cup Raw Cashews
  • 1/2 Cup Water
  • 2 Tbsp Coconut Sugar
  • 1/4 tsp Vanilla
  • Pinch of Himalayan salt
  • Pinch of Cinnamon

Soak cashews in enough water to cover for at least 2 hours until softened.  Drain.  Blend in high-powered blender with rest of ingredients.  Enjoy with fruit as a snack!
