These chicken thighs are so easy it’s almost embarrassing. But, with this simple blend of flavors I wouldn’t grill them any other way. It gives you a good balance of tartness and sweet. I’m a sucker for balsamic so I add it to a ton of stuff.
We’re traveling today, so my post will be short and sweet, but this recipe is too!
So, your baste just has 3 ingredients and I usually have these stocked up!
Take 1/4 cup of dijon mustard, 1/3 cup of maple syrup and 1 tablespoon of balsamic.
Mix it all together.
I don’t know why, but this always tends to be our basting cup when we grill. We all have our habits!
Now your baste is ready. With brush in tow.
Put your thighs on a plate and salt and pepper both sides. Not to gross you out, but I don’t even cut off the fat. It keeps the chicken juicy and adds flavor.
Spray your grill with non-stick spray and turn it on high for about 10 minutes to get it real hot.
Now throw your salt and peppered chicken on the grill. Grill for 3 minutes and when it looks like this…flip.
Cook for 3 more minutes, then baste with your mustard/maple mixture.
Pull down your cover and let the baste soak in for 1 minute.
Now, flip your chicken and baste the other side.
Cover and cook 1 more minute.
Flip again, let it sit for 30 seconds.
Now you’re done! Plate and eat immediately. Easy peasy.
Easy Grilled Chicken Thighs
Serves 4
- 4 Chicken Thighs
- 1/4 Cup Dijon Mustard
- 1/3 Cup Maple Syrup
- 1 Tbsp Balsamic Vinegar
- Salt and Pepper to taste
Spray your grill with non-stick spray and heat on high for 10 minutes. Mix mustard, maple syrup and balsamic for the baste. Salt and pepper both sides of your chicken thighs. Grill for 3 minutes, then flip and grill the other side for 3 minutes. Baste chicken with syrup mixture with a basting brush and cook for 1 minute. Flip. Baste the other side and cook for 1 minute. Flip one last time and cook 30 seconds or so. Now remove from grill and eat with some yummy roasted sweet potatoes.
