Chilly weather, cozy pants and that old sweatshirt. The only thing better would be a warm rich cup of cocoa to curl up with at the end of the day, right? If it’s all natural hot cocoa that happens to be so much more delicious than Swiss Miss…all the better.
Cacao is your new friend. It has all the flavor of chocolate minus the stuff that’s bad for you. Rich in magnesium, iron and antioxidants it’s a win-win. If you’re a chocolate fan like me, you can get your fix without a lot of the guilt.
I originally made this with everything but the marshmallows. It was kinda bitter. Actually, really bitter. I topped it with marshmallows but I felt like they needed to be mixed in. I tossed everything back in the blender with the marshmallow topping, turned it on and mixed it all together.
Perfecto! It hits the spot. I have more marshmallows as a topping here, but if you don’t want any more added sugar you can opt out. 2 tablespoons blended right in with the chocolate is plenty.
To make: Heat the milk or milk substitute in a saucepan until warm or just boiling. Pour into blender and blend with the next 5 ingredients– cacao, almond butter (homemade, even better), coconut cream, marshmallows and salt–until smooth. Grab your favorite cup, and top with more marshmallows.
Treat yourself to these chilly fall and winter months with a warm, rich cup of cocoa. And if you need more chocolate fix try the all clean No Guilt Mint Chocolate Mousse!
