Banana kale smoothies have become a staple at our house. Kale has been the it green for the last few years and for good reason. It packs twice the vitamin-C as spinach.
The problem? Most people just can’t stomach it. It’s kinda bitter right? The best and easiest way to get our leafy greens is in a smoothie. And we can hide the bitter flavor with other things like bananas.
This is my go-to smoothie more than anything else. I usually have all the ingredients on hand.
So, if you have extra kale in the fridge and you don’t know what to do with it? Throw it in a smoothie!
I always add some sort of protein in smoothies and with this one and all its kale, adding almond butter is a good idea. It packs the protein you need to keep your blood sugar from dropping. Plus, it tastes good and it’s cleaner and healthier than peanut butter. Honestly, after eating almond butter for a while, you’ll get to where you prefer it over peanut butter.
This little treat is great for breakfast or a snack in the afternoon. And really quick to make.
First pour in 1 cup of almond or coconut milk (so, you can use the nice little measuring lines on the blender), then throw in 1 frozen banana, 3 cups of kale, 1 tablespoon of almond butter and 1/2 teaspoon of vanilla extract.
Blend it all up on full speed. You don’t want bites of chewy kale in your smoothie!
Pour into a cute cup and enjoy!
