So, I stumbled onto a recipe of homemade nutty granola and it was fantastic. As I’ve made it over the past year, I have changed the recipe to my liking. My version is filled with as many nuts as I can find in my pantry! So here goes…
Preheat your oven to 250 degrees.
If you don’t have pecans, use walnuts! If you don’t have pumpkin seeds, use something else. Get my drift? This recipe is hard to screw up.
Be sure to roughly chop your pecans. You don’t need a giant pecan in your mouth.
Combine your first 8 ingredients in a large bowl.
Next, combine coconut sugar with 1 Tablespoon of water.
Cook over low heat until sugar is dissolved. Then, take off heat and add coconut oil. Stir until oil melts.
It’s not pretty and it won’t combine perfectly. But, I promise it’ll turn out.
Add your sugar and oil mixture to the dry ingredients. Don’t forget your vanilla! Add that too. Mix well.
Press your mixture evenly into a rimmed cookie sheet. You don’t even need to grease it. That coconut oil will keep it from sticking.
Bake 45 minutes, then use a spatula and gently turn it over to mix. If you want it chunky, go easy on the flipping. Then stick back in the oven and bake for 20 more minutes.
Till it’s nice and brown like this. Yum!!
Voila! You’ve got yourself enough granola for a week! Eat it by itself or with a dollop of plain yogurt and berries! It’ll stick to your bones till lunch.

- 2 Cups Oats Gluten Free
- 1/2 cup Pumpkin Seeds
- 1/2 cup pecans roughly chopped
- 1/4 cup sunflower seeds
- 1/4 cup toasted coconut flakes unsweetened
- 2 tablespoons chia seeds
- 1 teaspoon cinnamon
- 1/2 teaspoon himalayan salt ground
- 3/4 cup coconut sugar
- 1/2 cup coconut oil
- 1/2 teaspoon vanilla extract

- In a small saucepan, combine coconut sugar with water. Cook over low heat until sugar is dissolved. Turn off heat, add coconut oil and stir until oil has melted. Add sugar and oil mixture to the bowl along with vanilla. Mix to combine well. Press into baking sheet.
- Bake 45 minutes, then use a spatula and turn to mix. Try not to break the big chunky pieces. Bake for another 20 minutes. Allow to cool. Enjoy!
