You can cook your chicken one of two ways, bake or sauté.
Baking Chicken Breasts
Salt and pepper both sides and bake chicken breasts in dutch oven uncovered 25-30 at 350 until completely cooked through.
Sautéed Chicken Breasts
Heat a drizzle of olive oil in dutch oven over medium heat. Salt and pepper chicken breasts. Cook 5-7 minutes per side or until completely cooked through.
Remove chicken breasts from dutch oven leaving the remaining juices and set aside to cool. Then, dice the chicken to 1/2 inch cubes. Heat a drizzle of oil in the pot to medium and cook onion, garlic and jalapeño until tender and fragrant.
Add the rest
Add the rest of your ingredients and bring to a boil. Turn down to medium high heat and cook until vegetables are tender about 15 minutes. Add diced chicken and cook another couple of minutes. Enjoy with tortilla chips, Mexican cheese and sliced avocado dropped right in the soup!
