Fresh figs seem to be everywhere lately. We’ve seen them in all the best restaurants, too. I grabbed some the other day and paired with my favorite cheese! Boom. Gotta perfect pizza.
This pizza would be a lovely lunch, a nice light dinner or the perfect appetizer!
Naan is a wonderfully light bread that’s not heavy by any means, so you don’t get the chewy, thick, gluteny stuff that’s in regular pizza dough. It makes a great pizza crust.
Most supermarkets sell naan, so you should be good to go. Look in the flatbreads section or even in deli. If you can’t find it, just use regular flatbread.
Anyone who’s a fan of goat cheese know that it’s best to balance it out with sweetness. In this one, you’ve got 2, the caramelized onion and figs. There’s so much flavor, you don’t need to drench in sauce.
Here’s your easy lunch…
Start preheating your oven to 425, then prep your ingredients. Slice up your onions really thin and the figs somewhat thin or to your liking really.
Heat a large nonstick (preferably, but no pressure if you don’t have one) pan with a drizzle of olive oil on medium heat. Add your onions with a dash of sea salt and cook until caramelized. This takes patience ya’ll! Do not try to speed up the process by turning up your heat! Burned onions are gross.
Stir the onions occasionally and if you notice they’re starting to burn, turn the heat down. These guys will take 20-25 minutes to caramelize. By the way, if you’re strapped for time, you can always cook your onions ahead of time and store in the fridge until you’re ready to use.
Next, evenly spread the caramelized onions over the naan. Tear your luscious goat cheese into little pieces. Add to your pizzas. Now, bake in the oven for 8 minutes on a cookie sheet until the naan is crisp and the cheese is slightly melted.
Meanwhile, toss your arugula in a medium bowl with a small drizzle of olive oil and some salt and pepper to taste.
After you pull them out of the oven, let them cool a couple of minutes, then add your sliced figs and arugula.
Voila! Done. You have a lovely gourmet lunch that is super easy.

- 2 naan bread
- 4 oz goat cheese torn into pieces
- 2 purple onion thinly sliced
- 3 figs fresh, sliced
- 2 cups arugula
- olive oil
Ingredients

- Preheat oven to 425. Heat a drizzle of olive oil in a large pan on medium heat. Add sliced onion with salt and pepper to taste and cook for 20-25 minutes stirring occasionally. If the onion starts to burn turn the heat down. Cook until caramelized.
- Divide cooked onion and spread evenly over the naan. Sprinkle the torn goat cheese on top. Bake on cookie sheet for 8 minutes.
- Meanwhile, toss arugula with a drizzle of olive oil and a little salt and pepper. After naan has cooled a bit, add fig slices and arugula on top. Enjoy!
