Preheat oven to 400 degrees. Mix melted ghee, garam masala, salt and garlic cloves in a small bowl. Set aside.
Pat chicken dry and spatchcock. Rub with garam masala mixture on top and underneath skin of chicken. Place chicken on a wire rack on a rimmed baking sheet and roast for 1 hour and 15 minutes. Let rest for 5-10 minutes before slicing.
