Chocolate energy bites, flax energy bites, pumpkin energy bites. Seems like there’s so many these days. Well, they’re everywhere for 3 reasons.
- They’re healthy
- They’re easy
- They are sooooo tasty.
I found this recipe for lime coconut no bake energy bites from Oprah.com that are refreshingly different. The only thing I changed was substituting almond milk for coconut milk. They’re a great protein snack for summertime.
I’ve been snacking on these things for a week and they fill me up. Two does a body good. You can either eat these pre-workout or pre-bedtime.
Even if you’re not a big coconut person, you’ll like these. The lime really balances out the sweetness of the coconut. You get sweet and savory!
For the recipe, you’ll need a food processor to get everything evenly combined. If you don’t have one, a blender will do ;).
Combine almond meal, coconut flour, 1/2 cup coconut, maple syrup, lime juice, 1 teaspoon of lime zest and coconut milk in a food processor.
Pulse until evenly combined. Add medjool dates and process for 30 seconds to 1 minute until it has a nice mealy consistency.
In a small bowl, combine 1 teaspoon of lime zest with 2 tablespoons of shredded coconut.
Scoop about 1 tablespoon of almond meal mixture and using wet hands form into balls. They form easily with the sticky dates in there. It makes about a dozen bites. Roll each ball in coconut lime mixture to cover. Refrigerate for 30 minutes to set.
I keep mine in a tupperware for up to a week. They are protein rich and give you tons of energy.
