Toss potato wedges and unpeeled garlic cloves with a drizzle of olive oil and salt on a rimmed baking sheet. Bake at 450°F for 20 minutes.
In small bowl, combine vinegar, mustard, sugar, pepper and 1 1/2 teaspoons olive oil. Squeeze roasted garlic into mixture and combine well. Pour over potatoes and toss to coat. Eat immediately.
