High Protein 3 Ingredient Pancake

The breakfast funk.  We all find ourselves in one sometimes.  Especially if you’re trying to eat low carb and sick of eggs. What else is there?  My husband started making these crepe looking things that looked pretty good.  I had a bite and surprisingly wanted more.  (I call them pancakes because there really is no other name for them.) Before I knew it, I was making these high protein thingies.  Besides being super tasty, they’re made with only 3 ingredients–egg...

Coconut Chia Pudding

coconut chia pudding

I know I posted chia pudding earlier this year, but my recipe has advanced leaps and bounds since then.  With only a couple of small changes. #1 Use canned coconut milk.  It is so much richer and more flavorful. #2 Mix in some carton coconut milk or your texture will be too thick. Also… refrigerate overnight for a better flavor blend. When we travel, we love to eat our way through where ever we are. Particularly dinners.  I usually balance...

Smoked Salmon and Asparagus Omelet

smoked salmon and asparagus omelet

When you see “smoked salmon and asparagus omelet,” many of you might have glazed over thinking it’s too gourmet to make quickly in the morning.  Welp, that isn’t true.  I wouldn’t do that to you!  And I don’t have the patience or time to make something overly involved. Let’s prep ingredients.  Once you’re cooking it goes really fast, so you need to have everything ready.  You’ll need a small non-stick pan, rubber spatula, 2 beaten eggs with a teaspoon of...

Peanut Butter and Banana Overnight Oats

peanut butter and banana overnight oats

We’re heading back to school and we all know what our kids need most to start the day off right.  A filling, protein-rich breakfast.  But, the tricky part is finding the time to do that. Well, I’ve got one here served up on a platter (or a jar) for you. The great thing about peanut butter and banana overnight oats is that of course it can be made the night before.  So, during the hustle and bustle of getting out...

Blue Protein Smoothie Bowl

blue protein smoothie bowl

We have smoothies all the time around here, but we rarely have smoothie bowls.  Honestly, it’s just a thicker version of a smoothie dumped into a bowl.  The fun part is you can add tons of toppings.  So, instead of drinking your breakfast through a straw, you can add some crunchy stuff such as homemade granola or make it protein packed with hemp.  With this blue protein smoothie bowl, you can start your day with loads of antioxidants and enough...

Clean Eating Banana Bread

clean eating banana bread

Since summer has flown by for most, or gone way too slowly in our case, we find ourselves already getting ready for school to start.  On school mornings, one of the trickiest things I find between running around looking for shoes and making sure the library book made it in the backpack is…is that we’ve gotta find a way to get a healthy breakfast in the belly.  Banana bread is one of the easiest breakfasts for school mornings and a...

Perfect Scrambled Eggs

Growing up my parents always made scrambled eggs a bit on the slimy side.  And you know what, that is the way to go if you ask me!  I guess slimy isn’t the best word.  Let’s call it medium rare.  The perfect scrambled eggs.  But, perfect is relative, I guess.  Just like steak, people like their eggs a certain way. You don’t have to eat them “medium-rare”, so I’m not going to guide you that direction, but I will tell...

Clean Nutty Granola

clean nutty granola

So, I stumbled onto a recipe of homemade nutty granola and it was fantastic.  As I’ve made it over the past year, I have changed the recipe to my liking.  My version is filled with as many nuts as I can find in my pantry!  So here goes… Preheat your oven to 250 degrees. If you don’t have pecans, use walnuts!  If you don’t have pumpkin seeds, use something else.  Get my drift?  This recipe is hard to screw up....
