Combine almond meal, coconut flour, 1/2 cup coconut, maple syrup, lime juice, 1 teaspoon of lime zest and coconut milk in a food processor. Pulse until evenly combined. Add medjool dates and process for 30 seconds to 1 minute.
In a small bowl, combine 1 teaspoon of lime zest with 2 tablespoons of shredded coconut.
Scoop about 1 tablespoon of almond meal mixture and using wet hands form into balls. Will make about a dozen bites. Roll each bite in coconut lime mixture to cover. Refrigerate for 30 minutes to set. Enjoy!
