In our house we eat a ton of sweet potatoes. Whole, diced, cut into fries. Why not spiralized? We’ve seen plenty of recipes for zoodles, so I bought a spiralizer and I found myself sticking a sweet potato on the thing first. They turned out great!
Using this was the easiest ever. It made a ton of little curly sweet potatoes. Once I figured it out, it took about 30 seconds to cut each potato. I’m not usually into gimmicky kitchen gadgets, but I absolutely love this one. It would be a little tricky to recreate this with a good knife.
So, here’s how you make them.
You cut one end of your potato so you can attach it to the spiralizer. Then you use it according to instructions to make cute then little curly fries. Put them on a rimmed cookie sheet and toss with a drizzle of olive oil and some salt and pepper. Cook in a 400 degree oven for 15 minutes, pull them out of the oven, toss and turn them a bit and stick back in for another 10.
Meanwhile, make your dipping sauce. Just get about 1/4 cup of mayo or Vegenaise and add 1/2 teaspoon of Sriracha. Add up to a teaspoon if you like it a little spicier. We always err on the side of less with the kids.
Now, you’re all done! If you feel like your sweet potatoes are little soft, let them sit for a few minutes after cooking to crispin up.
They’re so little, so it’s easiest to eat these with a fork! But, they’re so good!
Happy Eating!
